Gong Fu Cha Tutorials
There appears to be no standard Gong Fu Cha. Some use smelling cups and others not at all. Some like tea pets and others abhor them. Some will prefer a small pot, with or without fair cup, and others do it solely with the help of a gaiwan. What they all have in common is that people greatly enjoy this technique. OK, Don, I understand this is sensational, but if you spill the beans like this on Youtube, you will need to expect a drop in footfall in your Camden shop and a lot more people turning up at your home instead :-)
How to Say Thank You
Yes, you must not fill tiny cups (which often only hold 10ml or 20ml) too high or they will become unbearably hot, and how to say thank you in ‘Chinese tea language’ in various situations is well explained. However, if your tea contains unwanted chemicals, the first rinse will not get rid of these; quite on the contrary, the more often you resteep such a tea, the more such chemicals will be released into your drink. There is only one way to avoid this problem: Make sure you buy quality tea.
